Bromelain is a mixture of enzymes extracted from the stem of the pineapple (Ananas comosus). A single pineapple contains about 400–500 mg of bromelain. Industrially, it is extracted from unprocessed stems. 2400 GDU/g means 2400 units of gelatin-dissolving activity per gram, a measure of enzyme strength.
